Whole30 Mexican Cauliflower Rice & Sausage

Andouille Chicken Sausage
INGREDIENTS:
- 2 Andouille Chicken Sausages, sliced
- 1 tsp extra virgin olive oil
- 1/2 medium yellow onion, chopped
- 1 small jalapeno, chopped
- 2 cloves garlic, minced
- 1 Tbsp tomato paste
- 2 cups cauliflower rice
- 1/4 tsp cumin
- 1/8 smoked paprika
- Juice from 1/2 a lime
- Salt
- Pepper
- Cilantro for garnish
DIRECTIONS:
- Add olive oil to a pan on medium heat.
- Add the onions and jalapenos and sauté for a few minutes before adding the garlic and tomato paste.
- Break up the tomato paste and stir everything together until the tomato past has coated the majority of the onions.
- Add the cauliflower rice, cumin, and paprika and stir together for about 1-2 minutes.
- Add the Andouille Chicken Sausages and cook until the sausage is heated through, stirring occasionally.
- Add lime juice, salt and pepper to taste, and garnish with cilantro. Enjoy!
