Whole30 Italian Meatball Zucchini Boats

Italian-Style Chicken Meatballs

INGREDIENTS:

  • 8 Italian-Style Chicken Meatballs
  • 1 medium zucchini 
  • Extra virgin olive oil
  • 1 cup Whole30 compliant spaghetti sauce
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt 
  • Fresh ground black pepper
  • Fresh basil, chopped for garnish

DIRECTIONS:

  • Preheat the oven to 400 degrees. 
  • Cut the zucchini stem off and cut lengthwise.
  • Use a spoon to scoop out the center of the zucchini.
  • Add some olive oil to a baking dish and place the zucchini halves inside. 
  • Drizzle more olive oil over the zucchini and season with salt, pepper, and Italian seasoning.
  • Place the Italian-Style Chicken Meatballs inside the zucchini boats, then top with spaghetti sauce.
  • Bake uncovered for 20 minutes. Enjoy!
