Whole30 Chicken Burger Salad with Crispy Potatoes & Tomatillo Avocado Salsa Dressing

Three Pepper Chicken Burger
INGREDIENTS:
- 1 Three Pepper Chicken Burger
- 1 russet potato, diced
- 1 Tbsp extra virgin olive oil
- 1 tsp taco seasoning
- Spring mix
- 3 mini sweet peppers, sliced
- 2 Campari tomatoes, chopped
- Red onion, sliced
- 2 Tomatillos
- 1 jalapeno, stem and seeds removed
- 1/2 medium red onion
- Juice from 1 lime
- 1/4 cup water
- 1 garlic clove
- Large handful of fresh cilantro
- 1 avocado
- 1 tsp salt
DIRECTIONS:
- Toss the diced potatoes in olive oil and taco seasoning, then air fry at 400 degrees for about 15 minutes or until crispy.
- Warm up a Three Pepper Chicken Burger in the microwave or on the stove, then cut into strips.
- For the salsa, add all ingredients to a blender or food processor.
- Pulse until the dressing is blended to the desired consistency. Season with extra salt to taste.
- In a bowl, add the spring mix, crispy potatoes, sweet peppers, tomatoes, onions, burger, and salsa dressing. Enjoy!
