Whole30 Chicken Burger Salad with Crispy Potatoes & Tomatillo Avocado Salsa Dressing

Three Pepper Chicken Burger

INGREDIENTS:

  • 1 Three Pepper Chicken Burger
  • 1 russet potato, diced
  • 1 Tbsp extra virgin olive oil
  • 1 tsp taco seasoning
  • Spring mix
  • 3 mini sweet peppers, sliced
  • 2 Campari tomatoes, chopped
  • Red onion, sliced
  • 2 Tomatillos
  • 1 jalapeno, stem and seeds removed
  • 1/2 medium red onion
  • Juice from 1 lime 
  • 1/4 cup water
  • 1 garlic clove
  • Large handful of fresh cilantro
  • 1 avocado 
  • 1 tsp salt

DIRECTIONS:

  • Toss the diced potatoes in olive oil and taco seasoning, then air fry at 400 degrees for about 15 minutes or until crispy.
  • Warm up a Three Pepper Chicken Burger in the microwave or on the stove, then cut into strips. 
  • For the salsa, add all ingredients to a blender or food processor. 
  • Pulse until the dressing is blended to the desired consistency. Season with extra salt to taste.
  • In a bowl, add the spring mix, crispy potatoes, sweet peppers, tomatoes, onions, burger, and salsa dressing. Enjoy!
