Smashed Potato Breakfast Muffins

INGREDIENTS:

  • 6 Breakfast Time Mini Chicken Sausage Links, each cut into 6 pieces
  • 12 mini potatoes, washed 
  • 1/2 cup pepper jack cheese, shredded
  • Salt
  • Pepper
  • Cooking spray
  • Grated parmesan cheese
  • 4 eggs
  • 1 cup cottage cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp hot sauce of your choice

DIRECTIONS:

  • Add clean potatoes to a pot of boiling water and boil for 10 minutes, then remove from heat.
  • While the potatoes are boiling, use a blender to blend all the egg mixture ingredients together until smooth.
  • Preheat the oven to 350 degrees.
  • Spray a muffin pan with cooking spray and add some grated parmesan cheese to each muffin cup.
  • Put a potato in each muffin cup and smash with the back of a spoon.
  • Season each smashed potato with a pinch of salt and pepper then pour the egg mixture on top, filling the cup about 3/4 full.
  • Add 3 Breakfast Time Mini Chicken Sausage Links pieces to each cup and top with cheese.
  • Bake for 40 minutes.
  • Let the muffins cool before removing them from the pan. Enjoy!
