Smashed Potato Breakfast Muffins

INGREDIENTS:
- 6 Breakfast Time Mini Chicken Sausage Links, each cut into 6 pieces
- 12 mini potatoes, washed
- 1/2 cup pepper jack cheese, shredded
- Salt
- Pepper
- Cooking spray
- Grated parmesan cheese
- 4 eggs
- 1 cup cottage cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp hot sauce of your choice
DIRECTIONS:
- Add clean potatoes to a pot of boiling water and boil for 10 minutes, then remove from heat.
- While the potatoes are boiling, use a blender to blend all the egg mixture ingredients together until smooth.
- Preheat the oven to 350 degrees.
- Spray a muffin pan with cooking spray and add some grated parmesan cheese to each muffin cup.
- Put a potato in each muffin cup and smash with the back of a spoon.
- Season each smashed potato with a pinch of salt and pepper then pour the egg mixture on top, filling the cup about 3/4 full.
- Add 3 Breakfast Time Mini Chicken Sausage Links pieces to each cup and top with cheese.
- Bake for 40 minutes.
- Let the muffins cool before removing them from the pan. Enjoy!
