Sausage Shakshuka

Breakfast Time Mini Chicken Sausage Links

INGREDIENTS:

  • 4 Breakfast Time Mini Chicken Sausage Links, chopped
  • Olive oil
  • 1/2 red bell pepper, chopped and seeds removed 
  • 1/2 medium onion, chopped
  • 1 Tbsp garlic, minced
  • 2 Tbsp cumin
  • 2 Tbsp smoked paprika 
  • 2 Tbsp cayenne pepper
  • 3-4 medium tomatoes
  • 3 eggs
  • Crumbled feta
  • Cilantro, for garnish 

DIRECTIONS:

  • To a pan on medium heat, add a drizzle of olive oil, the bell pepper and chopped onion, then sauté for a few minutes until the onions start to soften.
  • Add the minced garlic and seasonings (cumin, paprika, cayenne pepper) and stir together for about 30 seconds. 
  • Add the chopped tomatoes, stir everything together, reduce the heat to low, and cover the pan to let the tomatoes simmer. 
  • Once tomatoes have reduced in size (about 5 minutes), crack the eggs directly into the pan and add the chopped Breakfast Time Mini Chicken Sausage Links.
  • Cover the pan and let the eggs poach to your desired doneness (most of the egg white should be cooked, at least 5 minutes). 
  • Sprinkle feta cheese and cilantro on top and serve with crusty bread.
