Sausage & Herb Feta Breakfast Quesadilla

INGREDIENTS:

  • 3 Apple & Maple Mini Chicken Sausage Links
  • 1 Tbsp extra virgin olive oil 
  • 2 Tbsp red onion, chopped
  • 6 Tbsp liquid egg whites
  • 1 flour tortilla
  • 8 oz feta cheese
  • 2 Tbsp extra virgin olive oil 
  • 2 Tbsp fresh dill, chopped
  • 2 Tbsp fresh Italian parsley, chopped
  • 1 tsp red pepper flakes (optional) 
  • Juice from 1 lemon

DIRECTIONS:

  • To a pan on medium high heat, add the olive oil, onions, liquid egg whites, and place the tortilla on top of the egg whites.
  • Cook for a few minutes until the egg whites are fully cooked then flip with a spatula.
  • Cook for another 1-2 minutes, then remove from the pan.
  • In the same pan, heat up the Apple & Maple Mini Chicken Sausage Links for a few minutes, flipping occasionally. 
  • Combine the feta cheese, olive oil, fresh dill, fresh Italian parsley, red pepper flakes and lemon juice to make herbed feta. 
  • Spread some herbed feta on one half of the egg white side of the quesadilla, followed by the arugula and warm sausages.
  • Fold the tortilla in half and enjoy!
