Sausage & Herb Feta Breakfast Quesadilla

Apple & Maple Mini Chicken Sausage Links
INGREDIENTS:
- 3 Apple & Maple Mini Chicken Sausage Links
- 1 Tbsp extra virgin olive oil
- 2 Tbsp red onion, chopped
- 6 Tbsp liquid egg whites
- 1 flour tortilla
- 8 oz feta cheese
- 2 Tbsp extra virgin olive oil
- 2 Tbsp fresh dill, chopped
- 2 Tbsp fresh Italian parsley, chopped
- 1 tsp red pepper flakes (optional)
- Juice from 1 lemon
DIRECTIONS:
- To a pan on medium high heat, add the olive oil, onions, liquid egg whites, and place the tortilla on top of the egg whites.
- Cook for a few minutes until the egg whites are fully cooked then flip with a spatula.
- Cook for another 1-2 minutes, then remove from the pan.
- In the same pan, heat up the Apple & Maple Mini Chicken Sausage Links for a few minutes, flipping occasionally.
- Combine the feta cheese, olive oil, fresh dill, fresh Italian parsley, red pepper flakes and lemon juice to make herbed feta.
- Spread some herbed feta on one half of the egg white side of the quesadilla, followed by the arugula and warm sausages.
- Fold the tortilla in half and enjoy!
