Rosemary Sweet Potato & Sausage Hash

Breakfast Time Mini Chicken Sausage Links
INGREDIENTS:
- 7 Breakfast Time Chicken Mini Links
- 1 large sweet potato, diced
- 1/2 sweet onion, chopped
- Extra virgin olive oil
- 1/4 cup water
- 1 tsp fresh rosemary, chopped
- 1 tsp garlic powder
- Salt
- Pepper
- 4 eggs
- Green onions, chopped
- Sprig of rosemary
DIRECTIONS:
- To a pan on medium heat, add 1 Tbsp of olive oil and diced sweet potatoes.
- Cook for about 5 minutes, stirring occasionally.
- Add water and cover to let the sweet potatoes get tender, another 5 minutes.
- Remove the lid, move sweet potatoes to one side of the pan and add some olive oil and the chopped onions.
- Let the onions cook for a few minutes until they start to soften, stirring occasionally.
- Season with the chopped rosemary, garlic powder, and salt & pepper to taste.
- Add the Breakfast Time Chicken Mini Links, another drizzle of olive oil, and stir together.
- Add cracked eggs on top, cover, and cook until desired doneness.
- Garnish with chopped green onions and a sprig of rosemary.
