Rosemary Sweet Potato & Sausage Hash

Breakfast Time Mini Chicken Sausage Links

INGREDIENTS:

  • 7 Breakfast Time Chicken Mini Links 
  • 1 large sweet potato, diced
  • 1/2 sweet onion, chopped
  • Extra virgin olive oil
  • 1/4 cup water
  • 1 tsp fresh rosemary, chopped
  • 1 tsp garlic powder
  • Salt
  • Pepper
  • 4 eggs
  • Green onions, chopped
  • Sprig of rosemary

DIRECTIONS:

  • To a pan on medium heat, add 1 Tbsp of olive oil and diced sweet potatoes.
  • Cook for about 5 minutes, stirring occasionally.
  • Add water and cover to let the sweet potatoes get tender, another 5 minutes. 
  • Remove the lid, move sweet potatoes to one side of the pan and add some olive oil and the chopped onions. 
  • Let the onions cook for a few minutes until they start to soften, stirring occasionally.
  • Season with the chopped rosemary, garlic powder, and salt & pepper to taste. 
  • Add the Breakfast Time Chicken Mini Links, another drizzle of olive oil, and stir together.
  • Add cracked eggs on top, cover, and cook until desired doneness.
  • Garnish with chopped green onions and a sprig of rosemary.
