Mango Corn Salsa Burger

Three Pepper Chicken Burger

INGREDIENTS:

  • 1 Three Pepper Chicken Burger
  • 1 brioche burger bun
  • Lettuce
  • 1 mashed avocado (with lime juice and salt to taste)
  • 1 cup frozen super sweet corn
  • 1 cup frozen mango chunks
  • 1 jalapeno, diced
  • 1/2 cup red onions, diced
  • 1 Tbsp fresh lime juice
  • Handful of cilantro, chopped 
  • Salt 

DIRECTIONS:

  • Cut the frozen mango chunks into smaller pieces and set aside in a bowl. 
  • Cook the frozen corn according to package directions, drain any liquid and add to the bowl with the mangos.
  • Add the jalapeno, red onions, lemon juice, lime juice, cilantro and salt to the bowl and mix everything together with a spoon.
  • Let the salsa sit for at least 5 minutes, allowing the flavors to combine.
  • Heat the Three Pepper Chicken Burger all the way through.
  • Assemble the burger with a hamburger bun, lettuce, the cooked chicken burger, mashed avocado, and mango corn salsa. Enjoy!
