Mango Corn Salsa Burger

Three Pepper Chicken Burger
INGREDIENTS:
- 1 Three Pepper Chicken Burger
- 1 brioche burger bun
- Lettuce
- 1 mashed avocado (with lime juice and salt to taste)
- 1 cup frozen super sweet corn
- 1 cup frozen mango chunks
- 1 jalapeno, diced
- 1/2 cup red onions, diced
- 1 Tbsp fresh lime juice
- Handful of cilantro, chopped
- Salt
DIRECTIONS:
- Cut the frozen mango chunks into smaller pieces and set aside in a bowl.
- Cook the frozen corn according to package directions, drain any liquid and add to the bowl with the mangos.
- Add the jalapeno, red onions, lemon juice, lime juice, cilantro and salt to the bowl and mix everything together with a spoon.
- Let the salsa sit for at least 5 minutes, allowing the flavors to combine.
- Heat the Three Pepper Chicken Burger all the way through.
- Assemble the burger with a hamburger bun, lettuce, the cooked chicken burger, mashed avocado, and mango corn salsa. Enjoy!
