High Protein Cajun Mac & Cheese

Andouille Chicken Sausage

INGREDIENTS:

  • 1 box high protein mac & cheese 
  • 1 pack Andouille Chicken Sausage, chopped
  • Spinach 
  • 1/2 cup cottage cheese
  • 1/4 cup chicken broth or pasta water
  • 1 Tbsp Cajun seasoning
  • Panko breading 
  • Parsley, for garnish 

DIRECTIONS:

  • Toss the panko breading in melted butter and pan fry until golden brown.
  • Coko the macaroni according to package directions and set cooked noodles to the side. 
  • In a blender, combine the cottage cheese, chicken broth, and Cajun seasoning and blend until smooth. Set aside.
  • Add more liquid if the consistency is too thick. 
  • In the same pot used to cook the macaroni, on low heat, add a splash of chicken broth, Andouille Chicken Sausage, and spinach .
  • Stir together for a few minutes, just until the spinach starts to wilt. 
  • Add the cooked macaroni, cheese packet, and cottage cheese sauce and stir everything together.
  • Top with panko and parsley and enjoy!
