High Protein Cajun Mac & Cheese

Andouille Chicken Sausage
INGREDIENTS:
- 1 box high protein mac & cheese
- 1 pack Andouille Chicken Sausage, chopped
- Spinach
- 1/2 cup cottage cheese
- 1/4 cup chicken broth or pasta water
- 1 Tbsp Cajun seasoning
- Panko breading
- Parsley, for garnish
DIRECTIONS:
- Toss the panko breading in melted butter and pan fry until golden brown.
- Coko the macaroni according to package directions and set cooked noodles to the side.
- In a blender, combine the cottage cheese, chicken broth, and Cajun seasoning and blend until smooth. Set aside.
- Add more liquid if the consistency is too thick.
- In the same pot used to cook the macaroni, on low heat, add a splash of chicken broth, Andouille Chicken Sausage, and spinach .
- Stir together for a few minutes, just until the spinach starts to wilt.
- Add the cooked macaroni, cheese packet, and cottage cheese sauce and stir everything together.
- Top with panko and parsley and enjoy!
