Cherry, Jalapeno & Goat Cheese Meatball Creamy Orzo

Cherry, Jalapeno & Goat Cheese Chicken Meatball

INGREDIENTS:

  • 1 pack Cherry, Jalapeño & Goat Cheese Chicken Meatballs
  • 1 1/2 cups dry orzo
  • 1 pint cherry tomatoes
  • 3 garlic cloves
  • 2 cups vegetable or chicken broth
  • 1 pack goat cheese
  • 2 handfuls of spinach, roughly chopped
  • Salt & pepper

DIRECTIONS:

  • Add oil to a large skillet and once hot add Cherry, Jalapeño & Goat Cheese Chicken Meatballs, cook stirring for 5 minutes until they are nicely charred. Remove and set aside.
  • Dice garlic and add to the same skillet with another splash of oil and add cherry tomatoes.
  • Season with salt and pepper, stir and cover.
  • Cook until tomatoes soften and start to burst (about 5 minutes).
  • Add dry orzo and stir, cook for another minute.
  • Add broth, stir and cover. Let simmer for 10 minutes or until most of the liquid has evaporated.
  • Add half of the goat cheese and stir until the creamy orzo is formed. Option to continue adding more goat cheese if you like it extra creamy.
  • Add spinach and stir until it has wilted.
  • Serve orzo with meatballs and enjoy!
