Cherry, Jalapeno & Goat Cheese Meatball Creamy Orzo

Cherry, Jalapeno & Goat Cheese Chicken Meatball
INGREDIENTS:
- 1 pack Cherry, Jalapeño & Goat Cheese Chicken Meatballs
- 1 1/2 cups dry orzo
- 1 pint cherry tomatoes
- 3 garlic cloves
- 2 cups vegetable or chicken broth
- 1 pack goat cheese
- 2 handfuls of spinach, roughly chopped
- Salt & pepper
DIRECTIONS:
- Add oil to a large skillet and once hot add Cherry, Jalapeño & Goat Cheese Chicken Meatballs, cook stirring for 5 minutes until they are nicely charred. Remove and set aside.
- Dice garlic and add to the same skillet with another splash of oil and add cherry tomatoes.
- Season with salt and pepper, stir and cover.
- Cook until tomatoes soften and start to burst (about 5 minutes).
- Add dry orzo and stir, cook for another minute.
- Add broth, stir and cover. Let simmer for 10 minutes or until most of the liquid has evaporated.
- Add half of the goat cheese and stir until the creamy orzo is formed. Option to continue adding more goat cheese if you like it extra creamy.
- Add spinach and stir until it has wilted.
- Serve orzo with meatballs and enjoy!
