Caramelized Onion Burger Bowl with Crispy Potatoes and Creamy Caramelized Onion Sauce

Caramelized Onion & Gouda Chicken Burger

INGREDIENTS: 

  • 1 Caramelized Onion & Gouda Chicken Burger
  • Arugula
  • 1 medium Yukon gold potato 
  • 1 Tbsp extra virgin olive oil
  • 1/8 tsp of salt
  • 1/8 tsp pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1 large yellow onion, sliced 
  • 1-2 Tbsp extra virgin olive oil
  • 1/2 tsp brown sugar
  • 3/4 cup Greek yogurt
  • 1 Tbsp mayonnaise
  • 2 tsp Worcestershire sauce
  • 1 tsp lemon juice
  • 2 tsp fresh chives, chopped
  • 1/8 tsp onion powder for sauce
  • 1/8 tsp garlic powder for sauce

DIRECTIONS: 

  • Cut the onion in half and then into thin slices. 
  • To a pan on medium-low heat, add the olive oil, sliced onions, and brown sugar.
  • Stir constantly until onions are caramelized, about 20 minutes.
  • Combine the caramelized onions with Greek yogurt, mayonnaise, Worcestershire sauce, lemon juice, chives, onion powder and garlic powder.
  • Put the sauce in the refrigerator for at least 15 minutes before serving. 
  • Cut the potato into 2 inch chunks and boil the potato pieces for about 15 minutes or until fork tender. 
  • Preheat the oven to 400 degrees.
  •  Drain and add the potatoes to a bowl.
  • Toss the potatoes in olive oil, salt and pepper and then place the potatoes on a parchment lined baking sheet.
  • Using the bottom of a cup, smash the potatoes, drizzle a little more olive oil on top and bake for about 20 minutes or until potatoes are golden brown and crispy. 
  • Heat up the Caramelized Onion & Gouda Chicken Burger.
  • Assemble the bowl with arugula, the crispy potatoes, warm chicken burger, and caramelized onion sauce. Enjoy!
