Caramelized Onion Burger Bowl with Crispy Potatoes and Creamy Caramelized Onion Sauce

Caramelized Onion & Gouda Chicken Burger
INGREDIENTS:
- 1 Caramelized Onion & Gouda Chicken Burger
- Arugula
- 1 medium Yukon gold potato
- 1 Tbsp extra virgin olive oil
- 1/8 tsp of salt
- 1/8 tsp pepper
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1 large yellow onion, sliced
- 1-2 Tbsp extra virgin olive oil
- 1/2 tsp brown sugar
- 3/4 cup Greek yogurt
- 1 Tbsp mayonnaise
- 2 tsp Worcestershire sauce
- 1 tsp lemon juice
- 2 tsp fresh chives, chopped
- 1/8 tsp onion powder for sauce
- 1/8 tsp garlic powder for sauce
DIRECTIONS:
- Cut the onion in half and then into thin slices.
- To a pan on medium-low heat, add the olive oil, sliced onions, and brown sugar.
- Stir constantly until onions are caramelized, about 20 minutes.
- Combine the caramelized onions with Greek yogurt, mayonnaise, Worcestershire sauce, lemon juice, chives, onion powder and garlic powder.
- Put the sauce in the refrigerator for at least 15 minutes before serving.
- Cut the potato into 2 inch chunks and boil the potato pieces for about 15 minutes or until fork tender.
- Preheat the oven to 400 degrees.
- Drain and add the potatoes to a bowl.
- Toss the potatoes in olive oil, salt and pepper and then place the potatoes on a parchment lined baking sheet.
- Using the bottom of a cup, smash the potatoes, drizzle a little more olive oil on top and bake for about 20 minutes or until potatoes are golden brown and crispy.
- Heat up the Caramelized Onion & Gouda Chicken Burger.
- Assemble the bowl with arugula, the crispy potatoes, warm chicken burger, and caramelized onion sauce. Enjoy!
