Apple & Gouda Cheese Chicken Sausage
Ingredients:
- ½ loaf Tuscan bread, or your favorite loaf bread, large dice
- 2 Tbsp butter
- 2 Tbsp olive oil
- 1 medium white onion, small dice
- 1 carrot, medium dice
- 2 celery stalks, medium dice
- 1 peeled sweet potato, medium dice
- 1 cup peeled celery root, medium dice
- 2 tsp salt
- 1 tsp black pepper
- 2 Tbsp white sugar
- ¼ cup maple syrup
- 1 cup Chicken Stock
- 1 Tbsp heavy cream
- ¾ cup dried cherries
- 7 links Apple & Gouda Cheese Chicken Sausages, ½ inch dice
Directions:
- Preheat oven to 350 degrees. Put bread cubes on a sheet tray and bake for 8-10 minutes until crispy. Remove from oven and transfer to a large bowl.
- In a large non stick skillet, melt the olive oil and butter together. Add the onions, carrot, celery, sweet potato, and celery root, then season with salt, pepper, sugar, and maple syrup. Cook for 5-7 minutes over medium heat, stirring occasionally. Add the chicken stock, and continue to cook for another 1-2 minutes. Off the heat, add in the heavy cream and cherries and stir until everything is combined.
- In another non stick skillet, spray with cooking spray, and cook sausage until heated through. Add vegetable mixture and sausage to the bread cubes. Mix until all combined.
- Add mixture into a large baking dish, and bake uncovered for about 30-40 minutes until crispy on top, then serve!
