Apple Chicken Sausage Salad

Apple & Gouda Cheese Chicken Sausage
INGREDIENTS:
- 2 Apple & Gouda Cheese Chicken Sausage, sliced into 1/2 inch pieces
- 1/2 Tbsp extra virgin olive oil
- 5 cups spinach
- 1 Granny Smith apple, cut into slices
- 1/4 cup dried cranberries
- 1/2 cup candied pecans
- 3 Tbsp crumbled feta
- 1/4 cup extra virgin olive oil
- 1 Tbsp red wine vinegar
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 2 Tbsp lemon juice
- 1 garlic clove, minced
- 1/2 Tbsp honey
- 1/2 Tbsp Dijon mustard
DIRECTIONS:
- In a small jar, whisk the 1/4 cup extra virgin olive oil, red wine vinegar, salt, ground black pepper, lemon juice, garlic, honey, and Dijon mustard together to make the honey mustard vinaigrette.
- Add olive oil to the pan on medium heat and heat up the sliced Apple & Gouda Cheese Chicken Sausage for 1-2 minutes on each side.
- Let the sausages cool for a few minutes before adding to the salad.
- In a large bowl, add the spinach, apple slices, sausages, dried cranberries, and crumbled feta.
- Pour the vinaigrette in and toss everything together. Enjoy!
