Andouille Sausage Salad with a Spicy Chipotle Yogurt Dressing

Andouille Chicken Sausage
INGREDIENTS:
- 1 pack Andouille Chicken Sausage, chopped
- Mixed greens
- Orzo pasta
- Corn
- Avocado
- Red Onion
- Cilantro, for garnish
- 1 cup Greek yogurt
- 1 chipotle pepper from a can of chipotles in adobo sauce
- Lime juice (1/2 lime)
- 1 tsp extra virgin olive oil
- 1 garlic clove
- 1 tsp honey
- Salt
- Pepper
- 1 cup cilantro
DIRECTIONS:
- Blend the Greek yogurt, chipotle, lime juice, extra virgin olive oil, garlic, honey, salt, pepper, and cilantro together until smooth to make the dressing.
- Store the dressing in the fridge until ready to use.
- Prepare the salad by combining the Andouille Chicken Sausage, mixed greens, orzo, corn, avocado, red onion, and cilantro.
- Top with the dressing and serve.
