Sweet Potato Oatmeal Breakfast Bowl

INGREDIENTS:

  • 6 Country Style Breakfast Bites
  • 1 small sweet potato, peeled and cut into ½-inch cubes
  • 2 tsp extra virgin olive oil
  • ¼ tsp cumin
  • ¼ tsp paprika
  • ⅛ tsp garlic powder
  • 1 cup quick oats
  • 1 ½ cups hot water
  • 2 large eggs (over-easy, poached, or scrambled)
  • ½ medium avocado, sliced
  • ¼ cup grape tomatoes, quartered
  • Sea salt, to taste

DIRECTIONS:

  • Preheat the oven to 400 degrees. Line a medium baking sheet with parchment paper.
  • Place the potato cubes on the sheet and drizzle with olive oil. Season with cumin, paprika, garlic powder, and sea salt. Toss to coat. Bake for 10 minutes, or until starting to soften.
  • Flip the potatoes and move them to one side of the baking sheet. Add the country style breakfast bites to the other side of the baking sheet. Lower the heat to 325 degrees and bake for an additional 8-12 minutes until the bites are browned and warmed through and the potatoes are fully softened.
  • Meanwhile, divide the quick oats between 2 bowls. Season with a pinch of sea salt. Add half the water to each. Stir well. Let it sit for 1-2 minutes. Add more water or more oats as needed for desired consistency.
  • Top each oatmeal bowl with a cooked egg, sweet potatoes, breakfast bites, avocado, and tomatoes. Serve warm and enjoy!
